If you ask a guard, they will tell you and put a marker on your minimap to show you the way.

Alternatively, go to "List of Trainers..." on the left sidebar here, choose Skinning, and there you go!

The problem with that idea is that it doesn't show Skinning trainers. Something I've brought up on the Feedback forum but got no response. Anyway, the trainer is outside of Darnassus, in a hut just north off the road as you run into Darnassus from the starting point.

If I remember correctly, it is somewhere to the east of that small bridge outside of Darnassus. Make sure you are at least level 5 before trying to get the skill and don't forget to buy the skinning knife.

Oddly enough, when you ask a guard in Darnassus for a skinning trainer, he directs you to a person in the leatherworking building that only has a couple of shields for sale - no skinning training. :-(

As you found out, and as others mentioned, the actual skinning trainer for the night elf starting area is outside Darnassus, in a small hut north of the road between Darnassus and Dolanaar. Funny that the Darnassus guards don't know about him - maybe he's there incognito
