So, white mage has higher healing potential, but red mage has the ability to keep mp for longer, therefore, keeping the experience chain rolling, and getting more experience.
Each healing job is wanted in different situations, and I think it is important to mention that there are a few other jobs that can do a decent job of healing if they sub white mage.
What does this have to do with the OP's question?
Priests in WoW are a little different then those in FFXI. The are the main healers, yes, but Priests have the Shadow line of spells are have more damage/solo capabilities then the FFXI WHM.
Still, I would say that WHM are one of the most wanted/needed classes in the game, for party play. Which is good, because as a WHM you won't be doing much of anything past lvl 12 solo. WHM are not only practically essential in lower parties (and certain high end parties depending on situation), but they are masters of travel: WHM get Sneak/Invis, Teleport Spells, and if they sub /BLM, Warp. WHM can be pretty much anywhere in the world of Vana'diel in a matter of minutes. This is very handy to get around for quests/missions and gathering materials for crafting, etc.
If you are planning on playing WHM, I would suggest you actually start out as a BLM. The reason being they have an easier time soloing to party levels, and most low level parties in the Valkurm Dunes will snatch up a BLM quickly, regardless if they have a subjob. Take that to 18 when you can get a subjob, then start levelling WHM with the /BLM sub. This will make your life much easier, believe me. Levelling as a WHM in low level parties is hell, even more so without a subjob.
