You choose your server once, you cant chnage server once your on it, there are no differnaces other than the people on it. The six servers are: Castle lightWolf, Diren holld, Ferran's Hope, Hodstock, Marr's fist (my favorite by far) and Proudpine outpost known as the worst (lots of asses, trainers etc). Choose whichever server you want. It will say one is "recommended" ignore that. Just pic whichever you want.

Which server is most populated. I too am new to the game and would like to have people to play with. I really believe that SOE should start merging servers like they have been doing with EQ. That would really tighten up the community. What do they need all those servers for if no one is playing?

No matter what server, you'll always have griefers. You add PvP people are going to exploit it. You add a new mob/dungeon and people are going ot camp it. Seriously, from what I've read you people need to wake up. Give me a good reason why a server like say PPO would have more griefers than other ones? Now I have never played on PPO but I don't see how it could possibly have a different environment than the others.

Back to what I originally asked, what would be a good starting server?

With frontiers you get new gameplay features (class masteries: you can make a percentage of the xp you earn to go to cm points, you can buy things with the points be it abilities, more stats etc...), the graphics are also improved (thank god), You can have 10 spells in that tool belt thing instead of 5. You have Master classes which are like 1 big upgrade, + instead of being "Troll shaman "insert guild here" level 60" You can be a "Troll elder "guild name" level 60". These upgrades have various requirments: for example for a shadowknight to become a Death Knight he has to buy specific masteries, have spent 500 class mastery points and be level 55+. There are other things I'm leaving out I'm sure but thats all i can think of 4 now.
In short You should make the investment lol.

the worst server is ppo because almost everyone is an *** hole.

When you select a server only the toon you create is stuck to that server. You can choose a different server every time you log on to EQOA. If you relly wish to find out the best server for you then create a toon on each server. After a few days or a week or two of playing each toon you should be able to determine which server is best for you. The topic of best server worse server is moot, for all the servers have the problems of PLers, KSers, quest site farmers, trainers, profanity, the greedy, the untrustworthy, and even those who help others. It all comes down to what you can tolerate. Please make up you own mind with an informed decision by trying each server, it is the only way you can actually make the right choice for you.
