The most exciting part of Cataclysm for me is how Azeroth will be changed forever. I can't wait to see the sundering of the world as we've know it for nearly six years, and what really gets my gears turning is the fact that it'll never be the same again. Never. It's not like the raid boss we kill over and over and over again each week because they magically come back to life to be downed again... the world will be permanently scarred and there's no going back. No do overs. Familiar heroes and other NPCs may not survive and be forever gone, or may move and change and have amazing stories to share. I want to hear those stories.
For almost six years the world has been mostly unchanged. New areas have been made available to us in the form of expansions and dungeons of course, but some of us have made so many characters over the years that we could level through low-end content in our sleep. The sundering will turn veterans into noobs again because all that we know so well will no longer be the same. No one will know it all anymore. It'll add a shiny newness to the world, and we'll all, new and old, have to venture outside of our comfort zone to succeed.
As an explorer and one who feels like I've "seen it all" in Azeroth, I can't wait to re-discover "new" things in old lands that I know like the back of my hand. And for once, the resulting changes are permanent and we'll never be able to go back to the way it used to be. New people that begin playing WoW after the Cataclysm occurs will never get to experience where we have all come from and veterans will have to serve as historians.
I am the most excited about experiencing the delight of discovery again in Azeroth after six years. I look forward to making a Goblin and experiencing how her lore weaves in and out amongst the chaos of the sundering.
