About the only way you can really beat a bank's encryption is through ARP table spoofing, which would require admin access to the router. Otherwise, even if you intercept all traffic, it isn't readable. Worrying about something this rare is about as silly as running around worrying a meteor will hit you. It can happen, it just isn't worth your time worrying about it.
Wireshark, Network Miner, Social Engineering and a pretty well thought out MITM could do it. But yeah, odds of that happening are pretty freaking slim. You're more likely having someone at the bank steal all the info.
Like you had said earlier security is as good as the person between the keyboard and the chair.
A great way to keep up on the latest and greatest hacking techniques is to just live your life watching hak5 videos. I had a class last year that for the last month thats all we did and tried to replicate some of the stuff we watched.
We ended up getting bluesnarf to work and had access to a ridiculous amount of phones around the school.
