I think I would have quite long ago without Questhelper. It makes leveling so much faster.

I have some add-ons I could live without and others that I rely on a lot more. I try to keep my add-ons relatively in check and try to avoid hogging up too many resources with them.

Could live without:

Carbonite - it's nice, but definitely not essential.
Gatherer - helpful, but once you farm a while, you know where stuff is anyway.

Rely on a little:

Auctioneer Suite - I don't scan the AH much, but some of the sub-features are really nice.

Rely on a lot:

Outfitter - As a druid, in particular, this is a must have for me. Anxiously waiting for Blizz's version.
Cartographer - I think that's what I have for map coords...very useful to know coords at times.
Healbot - When healing on my pally, it's essential for me.
Omen - Raiding must have, although seemingly a little less so since Wrath.
DBM/Big Wigs - Very helpful for raiding.

There are certain mods I simply cannot play well without, and others that I can not have and not miss terribly.

Playing a shaman as my main, having a special set of shaman bars for my totems is critical, and I hate that Blizzard doesn't provide something like this. Even if I used all 5 bars, I'd have a tough time with the totems. With the totem add-on I use, I only keep 2 totems on my regular bars, for solo play when I need my taunt and my AoE fire totem when I overpull. But in instances/raids/WG, I find myself sometimes pulling a rarely used totem out to play, and I don't want these sitting on my action bars in a big pile.

I love the (sorry, guys) wowhead add-on that lets you see the comments from that site, as well as the ability to bring up a compass pointer for the locations garnered from there.

I love my bag space counters, I can't believe I survived for so long without Gatherer, and the stat comparison mods are a true lifesaver.

I don't need add-ons but they do help. Titan panel is my fav for being just a quick reference of the stuff it shows. I also like DBM and Gatherer. I could live without them but it just makes it a little easier.

I definitely need a few of them.

DoTimers - Yeah, good luck DPSing without this if you're Affliction specced.
Omen - As a spec that tends to generate quite a bit of threat, I know I would pull aggro a lot more without it.
Quartz - Just a massively useful addon. I'm usually hovering ~150 - 200 ms lag, so I don't doubt that my DPS would suffer without it.
Deadly Boss Mods / Big Wigs - I really shouldn't have to explain this one.
