Which did you choose, and are you happy with it?
At 39 I got a head start on the WSG/AB marks for a black war kodo. I just dinged 40 and since riding around on my regular gray kodo I've had second thoughts on which mount I would choose later. Kodo are massive, which looks badass if you're tauren sitting one of them (read: idle). But the actual animation of the kodo running looks kinda silly, and bouncing up and down is a bit of an eye strain.
Are wolves or raptors any easier on the eyes?

I got the Raptor just like everyone else :}
The Raptor has a really 'bouncy' stride where your toon really jitters straight up and down. It looks pretty silly, but it looks bad-*** from the side. Plus, it's tall. A mounted troll can almost walk right under a mounted Tauren :p
Kodos are huge (in a 'I eat your entire screen' way) and I utterly hate they way they run and move their legs. Look like a jointed puppet rather than an actual animal.
Wolves have the best running animation IMO. It's not perfect, but not bad. I would totally get another one but I don;t like the huge collar and slavering mouth.

Compared to raptors and wolves, kodos are the least "bouncy" when riding. Raptors bounce like crazy, wolves have a slower more fluid bounce to them but I hate their running animation most of all.

I took the raptor because I already had a Frostwolf. Between the Wolf, Raptor, and Brewfest Ram, I think I like the wolf the most.

I bought my Kodo at 40, and quickly realized how much I hated it, so when I dinged 60 I went to AV and got 50 marks so I could buy the Frostwolf Howler, it was a good choice. The wolf is my favourite mount, I like it better then the raptor my Troll rides, although I was torn on whether or not to go for the Black War Wolf or the Frostwolf. However, a quick pop into WSG where I realized the brackets for WSG and AB start at 60 instead of ending at 60 made my decision for me.

Taurens can't ride those. Unless there's a boss drop that I'm not aware of.
I think the only bird mount tauren can ride is the raven boss mount.

They can also ride the white Hawkstrider that Kael'thas drops.

Sidetracking a bit here (coz I am undead) but I was/am keen to get a Raptor, but seems a lot of people out there have them and there aren't nearly as many wolves.
Might have to keep an eye out for the animations, I haven't really paid that much attention to it before, but now that it has been pointed out to me, it'll prob stick out like a sore thumb. I have noticed how huge the mounts get when a Tauren is on it tho.
