Try to save as many as possible Shadowmoon Valley & Netherstorm quests for after you hit 70, you heard me right, after you hit lvl 70...
The reason being is that most of us know that after 70 you start getting gold for the experience you would of gotten, finish the full compliment of those 2 areas and you'll be looking at a great nestegg to get that epic mount fund started.

QFT.
I ground out 70% of my way from 68 to 70 for this very reason. When I hit 70, I still had over half the quests left in Blade's Edge, and hadn't touched Shadowmoon or Netherstorm yet.
When I hit 70, I upgraded some gear (didn't go crazy) and bought my regular flyer. I had about 900G left after that. I would've had more, but made a few BAD investments (trying to correct a market or 2 that went haywire with lemmings all trying to undercut the next guy. We're talking prices falling to less than 30% of fair market value - not "overpriced" inflation. FAIR market value. Guess I'm just not good at that sort of thing. :( )
Anyway, I'm a miner and skinner, but haven't really went out of my way to do either the last few days. I just soloed every solo quest I could to finish out Blade's edge, and a good part of the Netherstorm quests. I still haven't touched Shadowmoon, and have plenty of Netherstorm solo quests left, and loads of group/instance quests. I'm well over halfway to my training/mount money now. I don't know how much I'll squeeze out of Shadowmoon. But if the number of quests there is close to that of Netherstorm, I'll have my mount money before I'm even done questing.
It felt strange at first not having an xp bar. You'd glance at it now and then to measure your progress. Now, I find myself glancing at my bankroll the same way... and I'm often surprised how much I gained in a relatively short amount of time.
