I was wondering if WoW was as critcal as Final Fantasy XI with race and job, like who has the best stats for a classes abilities. When I play the game i want to be the most effective race with my class. I just need some pointers on which race would be the best at Rouges or what jobs are Night Elves the best at?

As of writing this, all races are even for all classes they can play. There are some racial abilities, but they are subject to change. Undead at the moment hav immunity to Fear, Sleep (mes), Underwater breathing, etc. While others have nothing..

The only real difference between races right now is starting statistics, and considering those go up as you level, the different between starting with 18 spirit versus 19 isn't going to matter too much in the long run.
Only the exceptions can be exceptional.

From what I've seen the starting stat differences are very small, like Illia said all races are pretty much equal for every class.

Simply put, other races need air to exist underwater, and do periodically have to surface.

As far as Horde Priests go, as that's the latest alt I'm working on, there is no way in holy high rolling hell I'd ever make another Troll Priest instead of an UD Priest.
I was so so pissed when I hit up lvl 18 with the Troll Priest and find out how *** they're racial spells are (Shadowguard & Hex) vs the UD ones (Devouring Plague & Touch).
Rerolled UD and couldn't be happier. The Breathing thing is a nice touch compared the Troll regen which I didn't notice that much vs the Cannabalize of UD.
Besides once you hit lvl 20, I'd much rather have Plague over Guard. It's like dual SW:P vs...what...some random buff that's similar to LS? Pffft. UD priests FTW.
As for druids? Tauren over NE any day of the week. Just on cosmetics alone, I'd much rather a Bear/Panter with giant spearlike Horns vs a pair of floppy ears. Plz. I'm more of a serious player with concern to names/char looks, so I can understand why some would like a bunny/bear.

I just can't stand it when a character isn't asthectically pleasing. Stupid *** names drive me bug-f*ck too. I've a lump in my back that's from the stick in my a$$ from being so **** about the game I know. Just can't to help it.
