Yes i think what your missing right now is food/drink. Usually when you started of you had a stack of each. Food/drink dosent work like WoW, in EQ2 you just eat one and it works like a buff for a certain duration. So instead of a regen burst, it gives you better hp/mana regen as soon as you get out of fighting situations.
When you try working around with tradeskill, youll see you can make better food & drink. Or you can just buy it around, it makes a whole difference, be sure to keep using the highest level food/drink available and your downtime will be kept to a minimum.
Also, from when i last played, sitting didnt change anything in regen speed, i am pretty sure its still like this. If not someone will correct me.
Ah man its so far from the old EQ days, back then you had to sit an open a spellbook to regain mana faster, the spellbook was fullscreen so you didnt see what was going on only the health bar. You heard the puller coming back with a train of frog in guk but couldnt see what was going on, then you got up and the spellbook closed, only to see that hell had come into the room, ah that was great. It got me my first white hairs as a cleric there.
